Cheesy Campfire Nachos


  • blue corn and/or plain tortilla chips
  • shredded cheese - you can use a tex mex or nacho blend or mozzarella
  • tomatoes diced
  • onions chopped
  • green peppers diced
  • jalapeƱos sliced and cut in half
  • foil plate
  • tin foil


  1. Lay the tortilla chips in a foil tray.
  2. Top with shredded cheese.
  3. Add another layer of tortilla chips.
  4. Top with more shredded cheese.
  5. Sprinkle with chopped onions, green peppers, tomatoes, and jalapeƱos.
  6. Cover with foil.
  7. Place on the grill over a campfire until the cheese is melted.
  8. Serve as is or with sour cream, salsa, or guacamole
