I know. I know. I’m skeptical too when someone calls something “the very best”, but this just is the very best pimento cheese dip you’re ever going to have. Like it will ruin you for future pimento cheese dips kind of good. Don’t say I didn’t warn you! Anyway, onto the recipe.
Pimento Cheese Dip Recipe:
- 2 cups sharp cheddar cheese, shredded
- 4 oz. jar of pimentos (drained)
- ½ cup mayonnaise
- 4 oz. cream cheese (softened)
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- ¼ tsp. paprika
- ½ tsp. pepper
- ¼ tsp. Old Bay Seasoning
- ¼ tsp. cayenne pepper
In a large mixing bowl, combine all ingredients well. Place in a nice bowl for serving. Top with freshly chopped green onions if desired.
Serve this dip with crackers or fresh cut veggies. You can also use the leftovers as a spread on burgers or sandwiches. If you prefer to make this a hot pimento cheese dip, spoon the mixture into a greased baking dish. Bake at 350° for 20 minutes until the cheese is beginning to bubble.
Feel free to kick up the spice a bit by adding a few dashes of hot sauce. If you want to get really crazy, you can add some fresh jalepenos, diced super small. This dip is easy to throw together at the last minute if you have the ingredients on hand. This is perfect for unexpected guests.
What is a pimento?
A pimento (also spelled pimiento) is a red, heart-shaped chili pepper. It is most commonly found in green olives. It is a mild pepper on the Scoville scale for spiciness.
It can be tricky to find jarred pimentos on their own. Since I’m pretty sure you don’t want to find yourself picking pimentos out of green olives to make this recipe, I’ll tell you that in our grocery store, they are located near the canned artichokes. If you still can’t find them, ask a store employee.
