Nachos are my favourite food, my ultimate comfort food, but a heaping tray of nachos is not exactly the most elegant thing to serve at a party! These little nacho bites are a nice alternative, the same great flavours with a slightly elevated presentation.
I use round yellow corn tortilla chips for these. Lay the chips out on a baking tray and spread each one with some refried beans and grated cheese. You can use either a cheddar cheese or jalapeño jack or a combination of the two. I like using spicy refried beans and a cheese with a bit of a kick. Bake them for 5 minutes or so, until the cheese has melted.
You won’t use the whole can of refried beans so if you want, you can use the rest to make Mexican Layered Dip.
While the cheese is still soft, press in a cube of tomato, purple onion, avocado, and a sprig of cilantro. We also like to add a slice of fresh jalapeño to ours, but the choice to add these depends on what spice tolerance your guests have.
Serve. These are very simple and nice and colourful. They are also gluten free!

Preheat oven to 375°.

Lay chips out on a baking tray.

Spread each chip with some refried beans and sprinkle with cheese.

Bake for about 5 minutes, just until cheese is melted.

While still hot, press in a piece of tomato, onion, avocado, cilantro and if desired, jalapeño into each.
