I’ve been on a bit of a pinwheels kick lately. Whether you call them spirals or roll-ups or pinwheels, they are easy to make and there are unlimited variations. These simple mediterranean pinwheels make an easy lunch or appetizer.
Mediterranean Pinwheels Recipe:
large flour tortillas (6)
227 g hummus (your own recipe or store bought)
1 cup seasoned feta cheese, crumbled*
2 1/4 oz. can black olives, sliced
1 cucumber, thinly sliced or grated
*You can purchase seasoned crumbled feta cheese or make your own by adding some oregano, pepper and mint to feta cheese and crumbling.
Spread 1-2 Tbsp. of hummus on each flour tortilla. Lay out thinly sliced cucumber in a single layer on top of the hummus or use grated cucumber. Sprinkle with crumbled, seasoned feta cheese. Place sliced black olives on top. Roll the tortilla tightly. Chill for about an hour in the fridge to make slicing easier.
Slice in 1 inch segments and lay out on a serving platter. Serve chilled.

Variations:
This recipe would also be excellent with roasted red pepper or chopped tomato to add a splash of colour.
You can also use red pepper sliced thinly with shredded lettuce for another mediterranean pinwheel idea that goes well in a packed lunch.
Using the basic recipe of hummus spread on a flour tortilla with cucumber, sliced black olives and feta cheese, there is really no way to go wrong as long as you stay with mediterranean ingredients.
