I think I’ve rather gushed about my love of discovering that some appetizers can be made ahead and frozen so I will try to keep my squeals to a minimum this time. It’s hard not to be excited though now that I have appetizers in my freezer at my disposal any time I need them. This spinach artichoke dip is a delightful freezer appetizer recipe.
Spinach Artichoke Dip Recipe:
10 oz. chopped frozen spinach, thawed and drained
2 cups sour cream
8 oz. cream cheese
1 cup mozzarella cheese
1/2 cup grated Parmesan cheese
398mL (14 oz.) can artichoke hearts, drained and chopped
2 cloves garlic, minced
1 tsp. chili pepper flakes (optional)
I like to stir in chopped purple onions to this spinach artichoke dip on the day of serving to add some crunch and colour.
Thaw and drain frozen spinach. In a bowl, combine all ingredients together. Place in large resealable freezer bags. Remove excess air, lay flat and freeze.
This recipe makes 2 large resealable freezer bags depending on how much you want in each. You can also double the recipe and put into 4 bags.
On the day you want to serve the spinach dip, take a bag out of the freezer and thaw it. Spoon into an oven safe dish and bake in 350° oven for 40 minutes or you can put it in a crock pot on low for 2 hours.
When I make this, I use my mini crock pot called the Little Dipper. That way, it stays warm all evening.
Serve warm with crackers, pita wedges or tortilla chips.
