Nachos are my favourite food in the world. For me, they are comfort food. Obviously, I can’t go a week without eating them, so I even make them when I’m camping. These easy cheesy campfire nachos bring all the flavours right to your campsite.
There’s nothing quite as satisfying as eating nachos made over the fire. For me, there’s something about nachos that inspires conversation. I love sitting around snacking and chatting.
One of the things I love most about nachos is how easily you can customize them. One of the friends we were camping with this particular time only like mozzarella cheese and doesn’t like tomatoes, so I was able to make a tray for him and then make a tray that way that I like them.
Cheesy Campfire Nachos:
- blue corn and/or plain tortilla chips
- shredded cheese – you can use a tex mex or nacho blend or mozzarella
- tomatoes, diced
- onions, chopped
- green peppers, diced
- jalapeños, sliced and cut in half
- foil plate
- tin foil
optional toppings:
- black olives
- red peppers, chopped
- banana peppers
- green onions
- black beans
- chili
- BBQ pulled pork
- shredded chicken
- corn
- browned hamburger
- taco meat
- taco seasoning
- green chilies
- avocado
- cilantro
- Lay the tortilla chips in a foil tray.
- Top with shredded cheese.
- Add another layer of tortilla chips.
- Top with more shredded cheese.
- Sprinkle with chopped onions, green peppers, tomatoes, and jalapeños.
- Cover with foil.
- Place on the grill over a campfire until the cheese is melted.
- Serve as is or with sour cream, salsa, pico de gallo, or guacamole.
