This cheesy bean dip is so easy to throw together. I always keep a can of black beans in my pantry just for this purpose. This bean dip is a favourite of my mom’s and of my middle daughter’s, so I make it often.
Cheesy Bean Dip Recipe:
19 oz. can of black beans, rinsed and drained
1 Tbsp. dry onion flakes
1 – 2 tsp. hot sauce (depending on how spicy you like things)
1/2 cup sour cream
3/4 cup shredded cheese*
*For the shredded cheese, you can use cheddar, marble, jalepeno jack, mozzarella, or a blend of several of these types.
Rinse and drain the black beans. Place them in a pie plate or other oven-safe serving container. Mix the dry onion flakes and hot sauce into the black beans. Stir well and then run the back of your spoon over them gently to spread them out evenly.
Spread the sour cream over the top of the black beans in a thin layer, covering the black beans.
Sprinkle shredded cheese over the sour cream. Bake at 350° for 10-15 minutes or until cheese is melted. Serve with tortilla chips for dipping.
Whenever I serve this at a party, if there is any bean dip left over, my middle daughter runs to the fridge in the morning in search of it and eats it for breakfast. She loves it so much!
