These are better than bacon. You read that and now you’re skeptical, right? You’re thinking “what could be better than bacon?” and I’m with you. Believe me, after not having bacon for 11 years, once I tasted it again, it was love at second sight! I’ve been trying to make up for lost time. Of course a recipe that claims to be better than bacon has to include bacon because the only way to make it better is by putting it together with this flavour combination.

Better Than Bacon cracker appetizer – yes, I said “better than bacon”!
Even though this appetizer contains an obvious winner (bacon), it also has a bit of a wild card, blue cheese. If you had told me two years ago that I would be eating (and enjoying) blue cheese, I’d have called you crazy, but two recipes completely changed my tune, this one and my Blue Cheese Stuffed Bacon Wrapped Dates.
To make this, first you have to caramelize onions. If you’ve never caramelized onions before, the trick is lots of butter and low heat. Melt butter (real butter please) in a small saucepan over low heat. Once it is melted, add thinly sliced white onion. Let it cook over low heat for a long time, stirring from time to time. When the onions turn into a nice light brown colour, you will know they are done.
Cook up a few slices of bacon and break them into pieces. Lay out water crackers on a baking tray. Top each cracker with some caramelized onions, then some blue cheese, and finish it off with some bacon. Bake them in a 350° oven for about 5 minutes, when the blue cheese melts and the cracker has softened.
They are the most divine little bites of deliciousness. I know that they sound a bit odd, but you have got to take the plunge and give them a try…you’ll thank me for it later!

- butter
- one onion
- 2 or 3 slices of bacon cooked and broken
- blue cheese
- 24 water crackers

Preheat oven to 350°.

Melt butter in small saucepan. Add thinly sliced onion. Cook on low heat until it turns a golden brown.

Lay out water crackers on a baking tray.

Top each cracker with caramelized onions, blue cheese, and a few pieces of bacon.

Bake for 5 minutes.
