I don’t know whose idea it was to put taco fixings inside the deliciousness of an avocado, but it’s a brilliant one! The only negative thing about Avocado Tacos is that I didn’t hear about them sooner! These are a healthy and delicious lunch, snack, or appetizer. If you use soy ground round in place of the beef, you can make these vegetarian.
Avocado Tacos Recipe:
- 1 lb. lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. pepper flakes
- 1/3 cup water
- 3-4 avocados, sliced in half with pits removed
Taco toppings:
- salsa, sliced green onion, diced tomatoes, shredded cheese, lettuce, sour cream, hot sauce
In a skillet over medium-high heat, brown the ground beef with the diced onion and minced garlic. Drain the grease. Add in the chili powder, ground cumin, pepper flakes and water.
Allow the meat to simmer in the seasonings for 15-20 minutes. If the mixture is too thick, add a bit more water. Slice the avocados in half and remove the pits. Fill the avocados with taco meat and then top with your favourite taco toppings!
Two years ago for Christmas, my mom got me this avocado slicer. She said it was because she knows I love guacamole so much. I thought it was the most ridiculous thing ever. Who needs a special tool to open an avocado?!
Well, fast forward a few months when I decided to give it a try. Let me tell you, now I’m that silly lady who uses a special tool to cut avocados! It’s not so much the cutting an avocado that I use it for as removing the pit. There’s this tool on the back that is specifically for removing the pit. You just jab it in and pull. The pit comes out in one smooth movement.
No wasting parts of the avocado trying to get the pit out. No struggling to scoop out the pit. When it comes time to cutting an avocado, I go over to the drawer with my avocado slicer.
I always think of how ridiculous I thought it was when my mom gave it to me. Don’t worry. I’ve called her to let her know how much I appreciate the thoughtfulness of the gift and that I’m actually using it now!
