These are my secret weapon to have my kids begging for more asparagus! These are so good. It is impossible to eat just one!
Whenever I make these, I “catch” the kids passing by the tray in the kitchen and popping them in their mouths. Seeing them eat their greens is always a good thing! Sometimes, there are hardly any left to officially serve!
My husband and I were at a restaurant and when I saw these go by, I was regretting not ordering them myself. I decided that they couldn’t be too hard to make myself and with the help of my friend Holly, gave it a try. It was even easier than I thought it would be.
Wash asparagus spears and snap off the bottom. Slice strips of prosciutto in half. Wrap the tops of the vegetables in prosciutto and set down on a metal baking sheet. Season the asparagus with cracked pepper and drizzle with olive oil.
Bake for about 20 minutes. The baking time will vary depending on the thickness of the asparagus. You want them to still have a bit of crunch to them so that they aren’t too floppy.
You can serve these prosciutto wrapped asparagus spears as a side dish or as an appetizer. Either way, they are delicious!
